Briony's Spinach Paneer

Ingredients

250g paneer, cut into cubes
1 onion, chopped
1/2 - 1 teaspoon cumin seeds
bag of fresh spinach
tin of chopped tomatoes
tin chickpeas (optional)
Directions
Heat some ghee or neutral tasting oil in a frypan. Shallow fry the paneer cubes until light golden on all sides. Remove from pan.
Fry the chopped onion in the same pan with the cumin seeds, until the onion has changed to a golden colour.
Add the spinach to the pan. Add the tin of chopped tomatoes, stir together and heat through. Add tin of drained chickpeas if desired (or instead of tomatoes).
Return the paneer to the pan to heat through again. Serve.
