Broad Bean and Mushroom Gratin

COOK TIME: 20 minutes
Ingredients
Last weekend we ate the broad beans from our garden to make a
Broadbean & Mushroom gratin. Submitted by Christine.
Fresh broad beans
Brown mushrooms
White sauce made using flour and butter, chicken stock, milk,
fresh herbs such as parsley, oregano, thyme, chives
Cheddar cheese, grated
Directions
Shell the broad beans and cook in salted boiling water for about
7 mins (don't over do it)
Saute lots of brown mushrooms in butter
Make a simple white sauce, with flour and butter and using
chicken stock as well as milk and then add lashings of fresh herbs
- parsley, thyme, oregano, chives etc
Add broadbeans and mushrooms to a lasagne dish, pour over the
white sauce, crumble day old bread over the top, then cheese (I
used aged port wine cheddar) and bake for 20 mins in a moderate
oven.
