Eggplant Parmesan
PREP TIME: 10 minutes
COOK TIME: 50-60 minutes total (20 minutes for eggplant and 30 minutes for prepared dish)
Ingredients
Any recipe which can get 4yr olds eating eggplant has got to be
good!

2 medium/large eggplants
2-3 eggs
Wholemeal breadcrumbs
1.5 jars tomato based pasta sauce
2 cups grated cheese
¼ cup grated parmesan
Directions
Slice eggplant into ¾ cm thick slices. Coat with beaten egg and
breadcrumbs and lie flat in one layer on baking sheets lined with
cooking paper. Place into a preheated 180 degree oven for 15-20
minutes until golden and tender (turn midway through if you
remember!)
Assemble the dish with a little pasta sauce, followed by layers
of eggplant, cheese, and more pasta sauce ending with pasta sauce
and cheese on top. Bake about 30 minutes until the cheese is
golden.
This is delicious, makes a layered dish like lasagne since the
breadcrumbs thicken the pasta sauce. The crumbed eggplant slices
are actually very yummy just on their own straight out of the oven
- crunchy on the outside and soft inside, so the first few times
they never made it into the full recipe!
