Finnish Herring Recipes

PREP TIME: 20 minutes each recipe plus soaking time
COOK TIME: Marinade overnight (or more)

Ingredients

MATJES HERRINGS WITH TOMATOES AND OLIVES

 

2 Matjes-brand herring fillets

4-6 shallots

12-14 olives with pimento

 

marinade:

3/4 cup ketchup

1 tbsp pickling vinegar

2 tbsp sugar

pinch of salt

1 tsp white pepper

3 tbsp oil

 

* if using salted herring, first soak in water overnight

 

 

FINNISH MUSTARD HERRING

 

MUSTARD:

if you don't have Finnish mustard you'll have to make some - it's quite easy! :) 100ml Colmans mustard (english mustard powder)

1 tbsp vinegar

2 tbsp liquid honey

1 tsp salt

50mll creme fraiche

50ml single cream

 

 

HERRING:

4 salted herring fillets

rinse the fillets and then let soak for at least an hour in:

500ml water

100ml vinegar

50ml sugar

 

Marinade:

200ml mustard

4 tbsp sugar

4 tbsp white wine vinegar

4 tbsp oil

50ml fresh dill

 

 

 

 

 



Directions

MATJES HERRINGS WITH TOMATOES AND OLIVES


Slice the herring into 20inch strips. Slice the shallots into fine rings.

Layer the herrings, shallots and olives in a glass jar.

 

Marinade: mix all except oil, stir and then add the oli slowly. Pour over the herrings ans leave in the fridge for a few hours (or longer).

Serve with new potatoes and rye bread.

 

FINNISH MUSTARD HERRING

 

MUSTARD:

Mix the first four ingredients together. Beat the last two together and then mix all together to make a smooth paste.

 

HERRING:

Slice the herrings and place in glass jar, top with the marinade and let stand in the fridge for 24 hours.
