Papaya Seed Salad Dressing - Anthea Springford

Ingredients

1/4 C peanut/walnut oil                       
1/4 C cider or white wine vinegar
1 tbsp onion salt
1/4 C sugar (or less)
1/2 tsp salt
1/4 tsp dry mustard                              
1 tbsp papaya seeds (fine to use from over-ripe papaya)



Directions

·    Place all ingredients in a blender, or food processor  (or use a wand as I do), and process until seeds resemble ground pepper.  The finer the seeds become the sharper/more peppery the taste. Adjust seasonings to taste.

 

Note: 

  1. I now find this quite sweet, so find I can very satisfactorily cut down the sugar content or use a sugar sub.
  2. It seems hard to get the seasonings right when I multiply the recipe so I tend to make separate batches even though I store them together.
  3. Keeps well in the fridge for ages.
  4. You can often buy sad looking papayas very inexpensively which have perfectly good seeds!
