Tarte Tomate
PREP TIME: 10 minutes
COOK TIME: 15 minutes approx.
Ingredients
This is a method and not a
recipe as such.

Flaky pastry (sheets if you
like or rolled and cut into a large dinner plate sized
circle)
Ripe tomatoes - Beefsteak
or other large sliced ones.
Pesto - use which ever
herbs you have in the garden as base or a good deli / supermarket
version
Parmesan cheese -
grated
Salt and Freshly ground
pepper
Mozzarella - thinly sliced
(Optional)
Directions
Heat the oven to
200 C
Spread the pastry with pesto leaving a 1cm edge around
the outside.
Arrange the tomatoes in
overlapping rings around the pastry working inwards.
Season. Sprinkle with
generous amount of parmesan.
Place mozzarella over the
top if using.
Bake until golden brown.
Serve warm with a glass of chilled rose and a salad for an easy
lunch.
Optional - top with cooked
lardons or bacon for a meat lovers' version.
