Tomato and Kidney Bean Salad

Ingredients

I have a simple dinner recipe that I do for myself or for two involving cherry tomatoes.

1 can of 400g Edgalls Red Kidney Beans

As many cherry tomatoes a you want

Olive or avocado oil

Goats feta or cows 200g  (recommend Ornelle Chevre Salada)
Basil to garnish( try Thai Basil)
 


Directions

Step one: Empty can of beans in a bowl after draining brine.

Step two: cut and crumble feta and sprinkle on top of beans

Step three: either add the whole or halve the cherry tomatoes

Step four: drizzle oil

Step five: garnish with basil as basil tastes lovely in this dish

Step six: eat and enjoy
 
I put Ornelle Chevre Salada in as firstly I react better to goats feta than cows and secondly this feta is lower in saturated fat ( 11g) than ordinary goats feta which is about 19g  - a big differance in salt.
 
If I do this for myself there is always some left over for either lunch or dinner the next day. I try and put Thai Basil on the dish as that is tastier than ordinary basil.
 
Now sit and savour and enjoy! So very simple all I can say is
