Tomato Salad with Green Herb Sauce

COOK TIME: 5 minutes (to toast nuts)

For the Herb Sauce

 

4 tbsp pine nuts

a handful of fresh basil

a handful of fresh parsley

1 clove of garlic, chopped

2 tbsp red wine vinegar

6 tbsp olive oil

salt and pepper

 

4 large ripe tomatoes, sliced

½ red onion, very finely sliced

 

 



Directions

 

To make the sauce, toast the pine nuts in a dry pan over medium heat until golden and nutty, about 5 minutes.  Put the toasted pine nuts, basil, parsley, garlic and vinegar in a food processor and pulse to a paste.  With the blade still turning, slowly trickle in the olive oil to make a thick herby dressing.  Add salt and pepper to taste.

 

Arrange the tomatoes on a suitable dish, scatter evenly with red onion and spoon over the vivid green sauce.

Serves 4.
