Dorothy's Tomato Soup/Sauce
PREP TIME: 1/2 hour
COOK TIME: 1 1/2 hours approx.

TOMATO SOUP
5 kg/11lb Tomatoes.
1 teaspoon Pepper
6 sprigs Mint (chopped)
3 tablespoons Plain Salt
1 tablespoon Celery Salt
2 cups Sugar
1 dessertspoon Mixed Herbs
8 medium Onions
Directions
Boil all together for 1 hour. Strain or put into Kitchen Wizz . Melt 250g/8 oz butter and add 2 tablespoons flour. Stir into soup and boil 10 minutes. Bottle or cool and freeze.
To serve dilute with equal quantities of either water or milk as preferred.
If used for a pasta dish etc do not dilute.
