Walnut Shortbread

PREP TIME: 10 minutes plus 15 minutes rest time in refrigerator
COOK TIME: 30 minutes

Ingredients

Karin raved about this shortbread during our  World in a Day: Eastern Suburbs Tour.  She says that it has a savoury/slightly sweet taste and is delicious served with blue cheese and fruit paste.


250 grams butter, softened

1 cup icing sugar

1 cup cornflour

1 cup walnut flour (available from Sabato)

 



Directions

Cream butter and sugar until light and fluffy.  Mix in dry ingredients.  Do not over-mix.  Chill 10-15 minutes in refrigerator.  Roll out to 5mm thickness and cut into desired shapes.  Place on baking sheets.  Bake at 150C for 30 minutes or until lightly browned.  Cool and serve with small wedges of blue cheese.
